Chef Fabian Saldana

Maize is the anticipated debut of a kitchen helmed by Chef Fabian Saldana, who most recently served as executive chef at Xochi. A native of Mexico, Chef Fabian draws on his first 19 years of life there, as well as the past 16 years he has spent learning in top restaurants throughout the Houston region, including Mark Cox’s Mark’s American Cuisine in Montrose, and Hugo Ortega’s Xochi in downtown.

Maize’s menu has been a joint effort between Chef Saldana and Chef Mark Cox. Chef Cox worked with the Maize team to prepare this special menu for Bailliage de Houston.
