Join us for one of the most distinguished evenings of the Chaîne calendar — our Annual Induction Dinner, hosted at the magnificent Hotel Saint Augustine. Open less than a year and already honored with the prestigious Michelin One Key distinction, the hotel offers a setting of modern elegance and culinary artistry, perfectly suited for this momentous occasion.
The evening begins as we welcome our newest members into the Chaîne family — a ceremony steeped in history, tradition, and the shared passion for gastronomy that unites our brotherhood at the table. Following the induction, guests will enjoy a champagne reception and silent auction benefiting the Chaîne Foundation Scholarship Fund, a tradition that supports the next generation of culinary excellence.
As we gather in fellowship, guests will be serenaded by a classical violinist, whose performance will lend an air of refinement and grace throughout the evening.
Dinner will feature a five-course gastronomic journey created in collaboration with the Bludorn Group’s acclaimed culinary and wine team. Each dish is a tribute to the season — an exquisite harmony of flavor, texture, and artistry — paired with exceptional wines selected to complement and elevate the experience.
This promises to be an unforgettable evening of elegance, camaraderie, and culinary brilliance — a celebration not to be missed.

First Course
Hamachi Crudo
Pristine yellowtail with crispy apple and kohlrabi and a touch of miso crème fraîche — a
delicate interplay of richness, freshness, and umami sophistication.
Second Course
Fall Squash Soup
A velvety autumnal purée, brightened by salsa macha, the crunch of pumpkin seeds
and the tang of goat cheese offer a perfect balance of sweetness, warmth, and depth.
Third Course
Mushroom Risotto
Sumptuously creamy and earthy maitake mushrooms and stracciatella risotto, finished with
pistachio pesto for a vibrant note of color and refined nuttiness.
Fourth Course
Glazed Short Rib
Slow-braised to sublime tenderness and finished with a classic sauce Bordelaise, pommes purée, and broccoli rabe – an homage to timeless French technique.
Fifth Course
Éclair
A decadent finale of crisp pâte à choux filled with silken cream and the crunch of praline, served alongside hazelnut fudge crunch ice cream — a perfect close to the evening’s indulgence.

Attire & Decorum
Black tie is requested. Ribbons and medallions are to be
