 In Japan, the phrase *ichigo ichie* reminds us that every gathering happens only once and deserves to be cherished. On October 11th, the Bailliage de Houston gathers at Aiko for an omakase evening created exclusively for our members, an eight-course expression of art, trust, and harmony that will never be repeated in quite the same way.

 Omakase means “I leave it to you.” It is a relationship built on trust between guest and chef, and it rewards that trust with food prepared with extraordinary care. Every fish on this menu is sourced directly from Japan and flown in fresh. Throughout the evening, Executive Chef Michael Chong will guide us through the mastery behind each course: how the fish is selected, how each cut is prepared to reveal its character, and the etiquette for enjoying each style of dish as it was intended.

### Carefully Paired by Our Own

 Each dish will be carefully paired with wine or sake selected by our Vice Echanson, Christian Varas. His selections are designed to bring the delicacy of the fish and the richness of the later courses into harmony. Pairings will be announced before the dinner.

**Chaîne Members:** $245 per person

 Seating is intimate and limited, so we encourage you to reserve early. This is also the perfect evening to introduce a friend to the Chaîne, since few experiences capture the spirit of our society more fully than a shared table and an extraordinary meal.
